🧾 Ingredients

  • 4 slices sturdy bread (sourdough, Texas toast, or white)

  • 2 tablespoons unsalted butter, softened

  • 6 slices bacon, cooked crispy

  • ½ cup shredded sharp cheddar cheese

  • ½ cup shredded mozzarella or Swiss cheese

  • ¼ cup dill pickle slices, patted dry

  • Optional spread:

    • 1–2 teaspoons Dijon mustard or

    • Pickle mayo (mix mayo + pickle juice)


👩‍🍳 Instructions

1️⃣ Prep the Bread

  • Butter one side of each slice of bread.

  • Lay bread butter-side down on a cutting board.


2️⃣ Build the Melt

On two slices of bread, layer:

  1. Cheddar cheese

  2. Crispy bacon

  3. Dill pickle slices

  4. Mozzarella or Swiss cheese

  • Spread Dijon or pickle mayo on the inside of the top bread if using.

  • Close sandwiches, butter-side up.


3️⃣ Cook Low & Slow

  • Heat skillet over medium-low heat.

  • Cook sandwiches 3–4 minutes per side, pressing gently, until bread is golden and cheese is fully melted.
