🧾 Ingredients

4 slices sturdy bread (sourdough, Texas toast, or white)

2 tablespoons unsalted butter, softened

6 slices bacon, cooked crispy

½ cup shredded sharp cheddar cheese
-
½ cup shredded mozzarella or Swiss cheese
-
¼ cup dill pickle slices, patted dry
-
Optional spread:

1–2 teaspoons Dijon mustard or
-
Pickle mayo (mix mayo + pickle juice)

👩🍳 Instructions
1️⃣ Prep the Bread

Butter one side of each slice of bread.

Lay bread butter-side down on a cutting board.
2️⃣ Build the Melt
On two slices of bread, layer:

Cheddar cheese

Crispy bacon
-
Dill pickle slices
-
Mozzarella or Swiss cheese

Spread Dijon or pickle mayo on the inside of the top bread if using.

Close sandwiches, butter-side up.
3️⃣ Cook Low & Slow

Heat skillet over medium-low heat.

Cook sandwiches 3–4 minutes per side, pressing gently, until bread is golden and cheese is fully melted.
