  • 1 tbsp fresh parsley, chopped

For the Creamy Mashed Potatoes:

  • 2 lbs (900g) potatoes, peeled and cut into chunks

  • 4 tbsp unsalted butter

  • 1/2 cup whole milk (or more for desired creaminess)

  • 1/4 cup sour cream (optional, for extra creaminess)

  • Salt and pepper, to taste

  • Fresh chives or parsley, chopped (for garnish)


Directions

1. Prepare the Mashed Potatoes

  1. Place potato chunks in a large pot and cover with cold water. Add a pinch of salt.

  2. Bring to a boil over high heat, then reduce to medium and simmer for 15–20 minutes, or until potatoes are tender and easily pierced with a fork.

  3. Drain the potatoes and return them to the pot.

2. Cook the Beef Bites
