📝 Ingredients

(Serves 6–8)

  • 1 can (27 oz) whole green chilies, drained and split open
    (Hatch brand preferred)

  • 1½ pounds ground beef

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1½ teaspoons ground cumin

  • 1 teaspoon chili powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 cups shredded Monterey Jack cheese

  • 1½ cups shredded cheddar cheese

  • 4 large eggs

  • 1 cup whole milk

  • ½ cup all-purpose flour

  • 1 teaspoon baking powder

  • Cooking spray or butter for greasing the dish


👩‍🍳 Directions

  1. Preheat the Oven
    Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Cook the Ground Beef
    In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess grease. Stir in garlic, cumin, chili powder, paprika, salt, and pepper. Remove from heat.

  3. Layer the Chilies
    Arrange half of the green chilies in a single layer in the prepared baking dish, covering the bottom.

  4. Add Beef & Cheese
    Spread the seasoned ground beef evenly over the chilies. Sprinkle with half of the Monterey Jack and cheddar cheese.
