🍰✨ Cinnamon-Spiced Baked Churro Cheesecake
A Creamy, Crunchy Dessert Inspired by Classic Churros
If you love the warm, comforting flavor of churros and the rich indulgence of cheesecake, this Cinnamon-Spiced Baked Churro Cheesecake is the best of both worlds. It combines a buttery cinnamon graham crust, a smooth and velvety cheesecake filling, and a sweet cinnamon-sugar topping that brings everything together with that unmistakable churro aroma.
This dessert is perfect for holidays, family gatherings, or anytime you want to impress with something that feels familiar yet elevated. The cinnamon adds warmth, the cream cheese delivers richness, and the baked texture creates a luxurious contrast between creamy center and lightly crisp edges.
🍪 Why This Cheesecake Is Special
What sets this cheesecake apart is its churro-inspired flavor profile. Instead of a plain graham crust, cinnamon is added to mimic the spiced coating of a churro. The cheesecake itself is classic and creamy, allowing the cinnamon to shine without overpowering the dessert. Finished with a cinnamon-sugar topping, every bite feels cozy, indulgent, and deeply satisfying.
Unlike no-bake versions, this baked cheesecake has structure, richness, and a smooth sliceable texture that makes it ideal for serving at the table.
🧾 Ingredients
For the Cinnamon Crust:
-
1½ cups graham cracker crumbs
-
1 teaspoon ground cinnamon
-
¼ cup granulated sugar
-
½ cup unsalted butter, melted
For the Cheesecake Filling:
-
24 oz (680 g) cream cheese, softened
-
¾ cup granulated sugar
-
3 large eggs, room temperature
-
¾ cup sour cream or heavy cream
-
1 teaspoon vanilla extract
-
½ teaspoon ground cinnamon
For the Cinnamon Sugar Topping:
-
¼ cup granulated sugar
-
1 teaspoon ground cinnamon
-
Optional: melted butter for brushing
🍰 Method
1. Prepare the Crust
Preheat the oven to 175°C (350°F). In a bowl, mix graham cracker crumbs, cinnamon, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of a springform pan. Bake for 10 minutes, then set aside to cool slightly.
2. Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese until smooth and creamy. Add sugar and mix until fully incorporated. Beat in the eggs one at a time, mixing gently. Add sour cream, vanilla extract, and cinnamon, and mix just until smooth—do not overmix.
3. Bake the Cheesecake
Pour the filling over the prepared crust and smooth the top. Bake for 45–55 minutes, until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool inside for 30 minutes to prevent cracking.
