Ingredients
For the Cake:
-
2 cups all-purpose flour
-
1 tablespoon baking powder
-
½ teaspoon salt
-
1 cup unsalted butter, softened
-
1 ¾ cups granulated sugar
-
4 large eggs
-
2 teaspoons vanilla extract
-
1 cup whole milk
-
Pink and blue food coloring (optional, for a cotton candy effect)
For the Frosting:
-
1 cup unsalted butter, softened
-
4 cups powdered sugar
-
2 teaspoons vanilla extract
-
2–4 tablespoons heavy cream or milk
-
Pink and blue food coloring
-
Mini cotton candy pieces, for garnish
Directions
1. Prepare the Cake
-
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
-
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
-
In a large bowl, beat the butter and sugar until light and fluffy (about 3–4 minutes).
-
Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with the flour mixture. Mix until just combined.
-
Optional: Divide the batter into two bowls and tint one pink and the other blue for a cotton candy swirl effect. Gently fold colors together in the pans for a marbled look.
-
Pour batter evenly into prepared pans and smooth the tops.
-
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
-
Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Make the Frosting
-
In a large bowl, beat the butter until creamy.
-
Gradually add powdered sugar, one cup at a time, mixing well.
-
Stir in vanilla extract and 2 tablespoons of heavy cream. Add more cream if needed to reach a smooth, spreadable consistency.
-
Tint frosting with pink and blue food coloring to achieve a soft cotton candy look.
3. Assemble the Cake
-
Place one cake layer on a serving plate. Spread a thick layer of frosting on top.
-
Place the second cake layer on top and frost the top and sides of the cake evenly.
-
Decorate with small tufts of mini cotton candy on top. Avoid placing cotton candy directly on frosting for long periods, as it may melt.
