Ingredients (Serves 4)

For the Fries:

  • 4 cups frozen waffle fries (or homemade fries)

  • 1–2 tablespoons olive oil

  • Salt, to taste

For the Steak & Veggies:

  • 1/2 pound thinly sliced steak (ribeye, sirloin, or flank steak)

  • 1 green bell pepper, sliced thin

  • 1 medium onion, sliced thin

  • 1 teaspoon garlic salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon smoked paprika (optional for extra flavor)

  • 1 tablespoon olive oil or butter

For the Cheese:

  • 1 cup shredded cheddar cheese (or cheese of choice)

  • 1/2 cup mozzarella cheese

  • 2 tablespoons cream cheese (optional, for extra creaminess)

  • 1/4 teaspoon crushed red pepper flakes (optional, for a little kick)

Optional Toppings:

  • Sliced jalapeños

  • Chopped green onions

  • Sour cream or ranch dressing

  • Pickled banana peppers


Directions

Step 1: Cook the Fries

  1. Preheat the oven to 425°F (220°C).

  2. Spread the waffle fries on a baking sheet in a single layer.

  3. Drizzle with olive oil and sprinkle with salt. Toss to coat.

  4. Bake for 20–25 minutes, flipping halfway through, until crispy and golden.

Step 2: Sauté the Veggies

  1. Heat 1 tablespoon olive oil or butter in a large skillet over medium-high heat.

  2. Add the sliced onion and bell pepper.

  3. Season with garlic salt, black pepper, and smoked paprika.

  4. Sauté for 5–7 minutes until softened and slightly caramelized. Remove from skillet and set aside.

Step 3: Cook the Steak

  1. In the same skillet, add a little more oil if needed.

  2. Add the thinly sliced steak.

  3. Cook for 2–3 minutes per side, until browned but still juicy.

  4. Return the sautéed veggies to the skillet and toss with the steak.

Step 4: Assemble the Fries

  1. Arrange the baked fries on a serving platter or oven-safe dish.

  2. Spread the steak and veggie mixture evenly over the fries.

  3. Sprinkle shredded cheddar and mozzarella over the top.

  4. Add dollops of cream cheese if using.

  5. Place under the broiler for 2–3 minutes, just until the cheese melts and bubbles.
