🧾 Ingredients

For the Brownie Base

  • 1 box fudge brownie mix

  • Ingredients listed on the box (usually eggs, oil, and water)

  • ½ cup all-purpose flour (for a thicker, sturdier base)

  • ½ cup caramel sauce (store-bought or homemade)

For the Cheesecake Layer

  • 16 oz (450 g) cream cheese, softened

  • ¾ cup granulated sugar

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

  • ½ cup sour cream or heavy cream

For Topping & Swirl

  • ½ cup caramel sauce (plus more for drizzling)

  • Optional: chocolate chips, chocolate ganache, or flaky sea salt

👩‍🍳 Directions

1. Prepare the Brownie Layer

Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper for easy removal.

In a large bowl, prepare the brownie batter according to the package instructions. Stir in the ½ cup flour to make the base thicker and more cake-like. Gently fold in ½ cup caramel sauce, swirling slightly for pockets of caramel.

Pour the brownie batter into the prepared pan and spread evenly. Bake for 15–18 minutes, just until the top is set but the center is still slightly soft. Remove from the oven and let it cool slightly while preparing the cheesecake layer.

2. Make the Cheesecake Filling

In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and beat until fully combined and fluffy.

Mix in the eggs one at a time, beating just until incorporated. Add vanilla extract and sour cream (or heavy cream), mixing on low speed to avoid over-aerating the batter.

3. Assemble the Cheesecake

Carefully pour the cheesecake batter over the partially baked brownie layer. Smooth the top with a spatula.

Drizzle ½ cup caramel sauce over the cheesecake batter. Use a knife or skewer to gently swirl the caramel into the top for a marbled effect.

4. Bake

Lower oven temperature to 325°F (160°C). Bake the cheesecake for 45–55 minutes, or until the edges are set and the center slightly jiggles.

Turn off the oven, crack the door open slightly, and let the cheesecake cool inside for 1 hour. This helps prevent cracking.
