Ingredients

(Makes about 20–24 bites)

  • 1 lb ground beef

  • ½ cup breadcrumbs

  • ¼ cup milk

  • 1 large egg

  • ½ small onion, finely diced

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon Italian seasoning

  • ½ teaspoon smoked paprika (optional)

For the Cheesy Filling:

  • 1 cup mozzarella or cheddar cheese, cut into small cubes

Optional Topping:

  • ⅓ cup ketchup

  • 2 tablespoons BBQ sauce


Instructions

  1. Preheat the Oven
    Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or line with parchment cups.

  2. Mix the Meatloaf Base
    In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Italian seasoning, and paprika. Mix gently until just combined—do not overmix.

  3. Fill & Stuff
    Scoop a small amount of meat mixture into each muffin cup. Press a cube of cheese into the center, then top with more meat mixture to fully enclose the cheese.

  4. Add Topping (Optional)
    Mix ketchup and BBQ sauce and spoon a small amount over each meatloaf bite.

  5. Bake
    Bake for 18–22 minutes, or until fully cooked and the tops are slightly caramelized.
