Ingredients
(Makes about 20–24 bites)

1 lb ground beef

½ cup breadcrumbs

¼ cup milk

1 large egg

½ small onion, finely diced

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Italian seasoning

½ teaspoon smoked paprika (optional)
For the Cheesy Filling:

1 cup mozzarella or cheddar cheese, cut into small cubes
Optional Topping:

⅓ cup ketchup

2 tablespoons BBQ sauce
Instructions

Preheat the Oven
Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or line with parchment cups. -
Mix the Meatloaf Base
In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Italian seasoning, and paprika. Mix gently until just combined—do not overmix. -
Fill & Stuff
Scoop a small amount of meat mixture into each muffin cup. Press a cube of cheese into the center, then top with more meat mixture to fully enclose the cheese. -
Add Topping (Optional)
Mix ketchup and BBQ sauce and spoon a small amount over each meatloaf bite. -
Bake
Bake for 18–22 minutes, or until fully cooked and the tops are slightly caramelized.
