📝 Ingredients (Serves 4–6)
-
2 tablespoons olive oil
-
1 medium onion, finely chopped
-
3 cloves garlic, minced
-
2 tablespoons tomato paste
-
2 cans (28 oz total) crushed or whole tomatoes
-
1 cup vegetable broth (or chicken broth)
-
½ teaspoon salt (adjust to taste)
-
¼ teaspoon black pepper
-
½ teaspoon sugar (optional, to balance acidity)
-
½ teaspoon dried basil
-
½ teaspoon dried oregano
-
¼ teaspoon paprika (optional, for warmth)
-
½ cup heavy cream or milk (optional, for creamy tomato soup)
-
Fresh basil or parsley, for garnish (optional)
👩🍳 Instructions
1️⃣ Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for 5–7 minutes, stirring occasionally, until soft and translucent.
Add the minced garlic and cook for 30 seconds, just until fragrant. Be careful not to brown the garlic.
2️⃣ Build the Tomato Base
Stir in the tomato paste and cook for 1–2 minutes to deepen the flavor.
Add the canned tomatoes (crush whole tomatoes with a spoon if needed), vegetable broth, salt, pepper, sugar (if using), basil, oregano, and paprika. Stir well to combine.
3️⃣ Simmer
Bring the soup to a gentle simmer. Reduce heat to low and let it cook uncovered for 20–25 minutes, allowing the flavors to meld beautifully.
4️⃣ Blend Until Smooth
Remove the pot from heat. Using an immersion blender, blend the soup until smooth and creamy.
(Alternatively, carefully transfer the soup in batches to a blender.)
