For the Meatballs

  • 1 lb ground beef

  • 1/3 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 large egg

  • 2 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ½ teaspoon black pepper

For the Soup

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 4 cups chicken or beef broth

  • 1 can (14.5 oz) diced tomatoes (optional for a tomato-cream base)

  • 1 teaspoon dried basil

  • ½ teaspoon dried oregano

  • ½ teaspoon crushed red pepper flakes (optional)

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 2 cups fresh spinach or kale

  • Salt and pepper, to taste

1️⃣ Make the Meatballs

In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined. Roll into small meatballs (about 1 tablespoon each). Set aside.


2️⃣ Sauté the Vegetables

Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for 4–5 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.


3️⃣ Build the Broth
