1 large salmon fillet (about 2–2½ lbs), skin-on or skinless

1 tablespoon olive oil

½ lb cooked shrimp, peeled, deveined, and finely chopped

½ lb lump crab meat (picked over for shells)

6 oz cream cheese, softened

½ cup shredded mozzarella or Monterey Jack cheese

2 tablespoons mayonnaise

1️⃣ Preheat & Prep
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Using a sharp knife, carefully butterfly the salmon by slicing horizontally through the thickest part, stopping before cutting all the way through. Open it like a book.
2️⃣ Season the Salmon
