  • 1 cup shredded cheddar cheese

🍽️ Instructions

1️⃣ Prep the Potatoes

Preheat your oven to 400°F (200°C). Peel and dice the potatoes into small, even cubes for faster cooking. Toss with olive oil, a pinch of salt, and pepper.

Spread the potatoes on a baking sheet and roast for 20–25 minutes, flipping halfway, until fork-tender and lightly golden.

2️⃣ Cook the Taco Beef

While the potatoes roast, heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.

Stir in taco seasoning and ½ cup water. Simmer for 3–5 minutes until thickened and well coated.

3️⃣ Combine Everything

Once the potatoes are done, add them directly to the skillet with the seasoned beef. Gently stir until the potatoes are fully coated in taco flavor.

4️⃣ Add the Cheese

Transfer the mixture to an oven-safe skillet or baking dish. Sprinkle evenly with both cheeses.

Return to the oven and bake for 10–15 minutes, until the cheese is melted, bubbly, and lightly golden.
