Crispy Corn Fritters

🌽✨ Crispy Corn Fritters – Sweet, Savory, and Irresistibly Golden

Corn fritters are the ultimate comfort food — crunchy on the outside, soft and tender on the inside, and bursting with sweet, juicy corn flavor. They make a perfect snack, appetizer, or side dish, whether for a weeknight dinner, a brunch spread, or even a party platter. Best of all, they’re quick to whip up with simple pantry staples.

🛒 Ingredients

For the Fritters:

  • 1 1/2 cups corn kernels (fresh, frozen, or canned and drained)

  • 1/2 cup all-purpose flour

  • 1/4 cup cornmeal

  • 2 tablespoons sugar (optional, for a slightly sweet twist)

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 large eggs

  • 1/4 cup milk (or more if needed)

  • 2 tablespoons chopped green onions or chives (optional)

  • 1/4 cup shredded cheddar cheese (optional, for extra richness)

  • Oil for frying (vegetable, canola, or avocado oil)

🍽️ Instructions

1️⃣ Prepare the Batter

  1. In a large bowl, combine flour, cornmeal, sugar, baking powder, salt, and pepper.

  2. In a separate bowl, whisk together eggs and milk until smooth.

  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.

  4. Fold in corn kernels, green onions, and cheddar cheese (if using). The batter should be thick but spoonable; add a splash more milk if needed.

2️⃣ Heat the Oil

Heat about 1/4 inch of oil in a large skillet over medium heat. To test if it’s ready, drop a small bit of batter into the oil — it should sizzle immediately.

3️⃣ Fry the Fritters

  1. Spoon 2–3 tablespoons of batter into the hot oil for each fritter, flattening slightly with the back of the spoon.

  2. Fry for 2–3 minutes per side, or until golden brown and crispy.

  3. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.

4️⃣ Serve

Serve warm as a side dish, appetizer, or even a sweet-savory snack. Corn fritters pair beautifully with:

  • Honey or maple syrup drizzle

  • Sour cream or Greek yogurt

  • Spicy sriracha mayo

  • Fresh salsa or pico de gallo
