🍓 How to Make Strawberry Cheesecake Turnovers
1️⃣ Prepare the Cheesecake Filling
In a medium bowl, beat softened cream cheese until smooth and fluffy.
Add sugar, vanilla extract, and lemon juice. Mix until creamy and well combined.
Set aside.
2️⃣ Make the Strawberry Filling (If Using Fresh Strawberries)
In a small saucepan over medium heat, combine chopped strawberries, sugar, and cornstarch.
Cook for 5–7 minutes until thick and jam-like.
Remove from heat and allow to cool completely.
(If using strawberry jam, no cooking needed.)
3️⃣ Prepare the Puff Pastry
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Unfold puff pastry and cut each sheet into 4 equal squares.
4️⃣ Assemble the Turnovers
Place a tablespoon of cheesecake filling in the center of each pastry square.
Top with a spoonful of strawberry filling.
Fold pastry diagonally to form a triangle.
Press edges together with a fork to seal.
5️⃣ Egg Wash & Bake
Whisk egg with milk or water.
Brush the tops of turnovers for a glossy golden finish.
Bake for 18–22 minutes, or until puffed and deeply golden.
