Ingredients (Serves 1–2)
-
3 large eggs
-
1 tbsp milk or cream (optional for ultra-creamy eggs)
-
Salt and black pepper, to taste
-
1 tbsp olive oil or butter
-
1/2 cup mushrooms, sliced
-
1 cup broccoli florets
-
1/2 ripe avocado, sliced
-
Fresh chives or parsley, chopped (optional for garnish)
Instructions
1. Steam or Blanch the Broccoli
Bring a small pot of water to a boil or set up a steamer basket. Add the broccoli and cook for 2–3 minutes until bright green and tender-crisp.
Drain and set aside.
This quick blanching ensures the broccoli retains its nutrients and vibrant color while staying pleasantly crisp.
2. Sauté the Mushrooms
Heat the olive oil or butter in a medium skillet over medium heat.
Add the sliced mushrooms and cook for 5–7 minutes until they release their moisture, become golden brown, and develop a rich, savory flavor.
Season lightly with salt and pepper.
Well-sautéed mushrooms add depth and umami to the entire dish.
3. Scramble the Eggs
In a bowl, whisk the eggs with a splash of milk or cream if you want extra creaminess. Add salt and pepper.
Lower the heat to low-medium and pour the eggs into the skillet.
Gently stir with a spatula, pushing the eggs from the edges inward until they’re just set and still soft.
Turn off the heat slightly before the eggs finish cooking — they will continue to set from residual heat.
4. Assemble the Breakfast Bowl
Arrange the fluffy scrambled eggs in a shallow bowl or on a plate.
Add the sautéed mushrooms, steamed broccoli, and sliced avocado to the side.
Sprinkle with chopped herbs and a final crack of black pepper if desired.
Serve immediately for the best taste and texture.
