Ingredients
Base Dough
-
1 cup unsalted butter, softened
-
3/4 cup powdered sugar
-
1 teaspoon vanilla extract
-
2 cups all-purpose flour
-
1/4 teaspoon salt
Mix-Ins
-
1/2 cup dried cranberries, finely chopped
-
1/2 cup pistachios, chopped
Preparation
1. Cream the Butter and Sugar
In a large bowl, beat the softened butter and powdered sugar together until the mixture is pale, creamy, and smooth. This step is key to creating the tender, crumbly texture that shortbread is famous for. Proper creaming incorporates air into the dough and helps the cookies bake evenly.
2. Add Vanilla and Dry Ingredients
Stir in the vanilla extract. Then add the flour and salt. Mix on low speed or with a spatula until the dough just comes together. Avoid overmixing — doing so can make the cookies tough rather than tender.
3. Fold in Cranberries & Pistachios
Gently fold the finely chopped dried cranberries and pistachios into the dough. Make sure they are evenly distributed so each cookie is packed with flavor and color.
4. Shape and Chill the Dough
Divide the dough in half and shape each portion into a smooth log about 2 inches in diameter. Wrap tightly in plastic wrap or parchment paper.
Chill the dough for 1–2 hours, or until firm. Chilling prevents the cookies from spreading too much and helps create clean, round slices.
5. Slice the Cookies
Preheat the oven to 350°F (175°C).
Remove the dough logs from the refrigerator and slice into 1/4-inch rounds using a sharp knife. If the dough crumbles slightly, gently press it back into shape with your fingers.
Line a baking sheet with parchment paper and place the cookie slices at least 1 inch apart.
