Whether you’re hosting guests or just treating yourself, this recipe will quickly become one of your most-requested desserts.

Directions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (163°C).

  2. In a mixing bowl, combine the Oreo crumbs, melted butter, and sugar.

  3. Press the mixture firmly into the bottom of a 9-inch springform pan. You can use the bottom of a measuring cup to smooth and compact it.

  4. Bake for 8 minutes, then remove from the oven and let cool while you prepare the filling.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat the softened cream cheese until smooth and creamy.

  2. Add the sugar and mix until fully blended.

  3. Add sour cream, heavy cream, vanilla extract, and salt. Mix again until smooth.

  4. Add eggs one at a time, mixing on low speed to avoid over-whipping (over-mixing creates cracks).

  5. Divide the batter into three equal bowls.

Bowl 1: White Chocolate Layer

  • Stir in the melted white chocolate only.

Bowl 2: Milk Chocolate Layer

  • Stir in the melted milk chocolate and 1 tablespoon cocoa powder.

Bowl 3: Semi-Sweet Chocolate Layer

  • Stir in the melted semi-sweet chocolate and the remaining cocoa powder.

Step 3: Layer the Cheesecake

You can choose one of two methods:

A. Layered Style (defined layers)

  1. Pour the semi-sweet chocolate batter into the crust.

  2. Gently spoon the milk chocolate layer on top.

  3. Finish with the white chocolate layer.

  4. Smooth the top.

B. Swirled Style (marbled)

  1. Alternate scoops of the three batters.

  2. Drag a knife through the batter a few times to swirl.

Step 4: Water Bath (No Cracks!)

  1. Wrap the outside of the springform pan tightly with aluminum foil.

  2. Place the pan in a larger baking pan.

  3. Carefully pour hot water into the outer pan until it comes halfway up the sides of your cheesecake pan.

  4. Bake at 325°F (163°C) for 55–70 minutes.

The cheesecake is done when the outer edge is set and the center jiggles slightly like Jell-O.
