1 cup Ataulfo mango, blended smooth

Topping:

1 cup mango-flavored gelatin, prepared and cooled to room temperature

Step 1: Prepare the Crust

Crush the Maria cookies into fine crumbs using a food processor or by placing them in a sealed bag and pounding with a rolling pin.

Mix the crumbs thoroughly with the melted butter until the texture resembles wet sand.

Press the mixture firmly into the bottom of a pie dish, creating an even, compact base.

Refrigerate while you prepare the filling.
Step 2: Bloom the Gelatin

Sprinkle the unflavored gelatin over the 3 tablespoons of water and let it bloom for 5 minutes.
