Effortless Pear Almond Greek Yogurt Cake with a Light, Fluffy Texture
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup almond flour
1 cup Greek yogurt (plain)
1/2 cup sugar
2 ripe pears, peeled and diced
2 eggs
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
1/4 cup slivered almonds
Pinch of salt
Directions:
Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
In a large bowl, whisk together the flour, almond flour, baking powder, baking soda, and salt.
In another bowl, mix Greek yogurt, eggs, sugar, and vanilla until smooth.
Fold in the dry ingredients and gently mix in the diced pears.
Pour the batter into the prepared cake pan and sprinkle with slivered almonds.
Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
