Spaghetti Carbonara

Ingredients:
12 oz spaghetti
4 oz pancetta or bacon, diced
2 large eggs
1 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons olive oil
Salt and black pepper to taste

Instructions:
1. Cook the Pasta:
Boil spaghetti in salted water until al dente. Reserve 1 cup of pasta water before draining.
2. Cook the Pancetta:
Heat olive oil in a skillet over medium heat. Add pancetta and cook until crispy. Stir in garlic and cook for 1 minute.
3. Prepare the Sauce:
In a bowl, whisk together eggs, Parmesan cheese, and a generous amount of black pepper.
4. Combine:
Add hot spaghetti to the skillet with pancetta. Remove from heat and quickly mix in the egg mixture, stirring to coat. Add reserved pasta water, a little at a time, to create a creamy sauce.
5. Serve:
Garnish with extra Parmesan and black pepper. Serve immediately.
