French Chicken Casserole
Ingredients:
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
2 tablespoons butter
1 onion, sliced
2 garlic cloves, minced
1 cup sliced mushrooms
1 cup chicken broth
1 cup dry white wine (or extra broth)
½ cup heavy cream
2 teaspoons Dijon mustard
1 teaspoon fresh thyme (or ½ teaspoon dried)
3 medium potatoes, thinly sliced
Salt and pepper to taste
Instructions:
1. Sear the Chicken:
Preheat oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet. Season chicken with salt and pepper, then sear until golden on both sides. Remove and set aside.
2. Sauté Vegetables:
Add butter to the skillet. Sauté onions, garlic, and mushrooms until softened.
3. Prepare the Sauce:
Stir in chicken broth, wine, Dijon mustard, thyme, and cream. Simmer for 2-3 minutes.
4. Assemble the Casserole:
Layer sliced potatoes in the skillet. Place chicken on top and pour the sauce evenly over.
5. Bake:
Cover with foil and bake for 35-40 minutes, removing the foil for the last 10 minutes to crisp up the chicken.
6. Serve:
Garnish with fresh thyme and serve warm.
