Smothered Ground Beef & Cheese Burrito
Ingredients
Beef Filling
1 lb lean ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp tomato paste
1½ tsp chili powder
1 tsp smoked paprika
½ tsp cumin
¼ tsp black pepper
Salt to taste
½ cup water or beef broth
Assembly & Topping
4 large flour tortillas
2 cups red enchilada sauce (store-bought or homemade)
1 cup shredded cheddar
1 cup shredded Monterey Jack
¼ cup diced white onion
2 tbsp chopped parsley or cilantro
Instructions
Make the Beef Filling
In a skillet, sauté onion in a splash of oil until soft. Add ground beef and cook until browned. Drain excess fat. Add garlic, tomato paste, and seasonings. Stir well and pour in water. Simmer for 5–7 minutes until thick and saucy.
Assemble Burritos
Place beef mixture into the center of each tortilla and roll tightly. Place seam-side down on a greased baking dish or plate.
Smother & Melt
Pour enchilada sauce over burritos. Sprinkle with shredded cheddar and Monterey Jack. Microwave or bake at 375°F for 10–12 min until cheese melts and sauce bubbles.
Garnish & Serve
Top with diced white onions and chopped herbs. Serve hot, directly on a white plate with sauce pooled around.
