Little Italy Beef & Pepper Pasta Bake
A warm, comforting twist with Italian flair and cheesy goodness.
Ingredients:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 cup diced bell pepper (any color)
1 (14 oz) can crushed tomatoes
1/2 cup tomato sauce
2 tsp Italian seasoning
Salt and pepper, to taste
8 oz wide egg noodles (about 4 cups cooked)
1 cup frozen peas
1 1/2 cups shredded cheddar
1/2 cup shredded mozzarella
Instructions:
Brown the ground beef in a skillet over medium heat, breaking it up as it cooks.
Add the chopped onion and cook until softened.
Stir in garlic and diced bell pepper, cook another 2 minutes.
Pour in crushed tomatoes and tomato sauce, then sprinkle Italian seasoning.
Season with salt and pepper, simmer gently for 5 minutes.
Meanwhile, cook egg noodles until just al dente, drain and return to pot.
Fold the sauce into the noodles, then stir in frozen peas.
Transfer everything into a baking dish and sprinkle cheddar and mozzarella evenly on top.
Bake at 375 °F until cheese is melted and bubbly (about 15 minutes).
Let rest a few minutes before serving. Enjoy!
