Butter Pecan Delight Fudge
Ingredients
2 cups granulated sugar
1/2 cup unsalted butter (1 stick)
2/3 cup evaporated milk
2 cups white chocolate chips
1 cup mini marshmallows
1 tsp vanilla extract
1 cup chopped pecans (toasted for extra flavor)
Instructions
1. Prepare the Pan:
Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Lightly grease the parchment paper.
2. Make the Fudge Base:
In a medium saucepan over medium heat, combine the granulated sugar, butter, and evaporated milk.
Bring to a boil, stirring constantly, and let it boil for 5 minutes. Make sure to keep stirring to prevent it from burning.
3. Combine with Chocolate:
Remove the saucepan from heat and quickly stir in the white chocolate chips and vanilla extract until smooth.
Fold in the mini marshmallows and chopped pecans, mixing until well combined.
4. Pour and Set:
Pour the fudge mixture into the prepared baking dish, spreading it evenly.
Allow it to cool at room temperature for about 2 hours or until set.
5. Cut and Serve:
Once the fudge is firm, lift it out of the pan using the parchment overhang. Cut into squares and enjoy!
