Pecan Pie Cobbler

Pecan Pie Cobbler

Ingredients:

For the Cobbler:

1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
For the Pecan Filling:

1 cup brown sugar, packed
1/2 cup corn syrup
1/2 cup unsalted butter, melted
3 large eggs
1 teaspoon vanilla extract
1 1/2 cups pecan halves
Directions:

Preheat Oven:

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Prepare the Cobbler Batter:

In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
Stir in the milk, melted butter, and vanilla extract until just combined. The batter will be lumpy.
Pour Batter into Baking Dish:

Pour the cobbler batter into the prepared baking dish, spreading it evenly across the bottom.
Prepare the Pecan Filling:

In a separate bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, and vanilla extract until smooth.
Fold in the pecan halves until well combined.
Layer the Pecan Filling:

Carefully pour the pecan filling mixture over the cobbler batter. Do not stir; the filling will sink into the batter as it bakes.
Bake the Cobbler:

Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the filling is set.
Cool and Serve:

Allow the cobbler to cool for about 15-20 minutes before serving.
Serve warm, ideally with a scoop of vanilla ice cream or whipped cream.
