Tiramisu Cheesecake
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup sour cream
1/2 cup strong brewed coffee, cooled
2 tablespoons coffee liqueur (optional)
For the Topping:
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Cocoa powder for dusting
Dark chocolate shavings (optional)
Directions:
Preheat the Oven:
Preheat your oven to 325°F (160°C).
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let cool.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
Add the vanilla extract, eggs (one at a time), and sour cream, mixing until fully incorporated.
Gradually add the cooled coffee and coffee liqueur (if using), mixing until smooth.
Bake the Cheesecake:
Pour the cheesecake filling over the cooled crust in the springform pan.
Bake for 55-60 minutes or until the center is set but still slightly jiggly.
Cool and Chill:
Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
Prepare the Topping:
In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble the Cheesecake:
Spread the whipped cream over the top of the chilled cheesecake. Dust with cocoa powder and add chocolate shavings, if desired.
Serve:
Carefully remove the sides of the springform pan. Slice and serve chilled.
