Chocolate Pecan Pie Bars
Ingredients:
For the Crust:
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon salt
1 cup unsalted butter, cold and cubed
For the Filling:
3 large eggs
3/4 cup light corn syrup
3/4 cup packed brown sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups pecan halves
1 cup semi-sweet chocolate chips
Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or aluminum foil, leaving an overhang for easy removal. Grease the lining lightly.
Prepare the Crust:
In a medium bowl, whisk together the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Press the mixture firmly and evenly into the prepared pan to form the crust. Bake for 15 minutes, or until lightly golden.
Prepare the Filling:
In a large bowl, whisk together the eggs, corn syrup, brown sugar, vanilla extract, and salt until smooth.
Stir in the pecan halves and chocolate chips.
Assemble and Bake:
Pour the filling over the warm crust, spreading it evenly with a spatula.
Return the pan to the oven and bake for 30-35 minutes, or until the filling is set and golden brown. The center should no longer jiggle when gently shaken.
Cool and Cut:
Allow the bars to cool completely in the pan. Once cool, lift them out using the parchment or foil overhang.
Cut into squares or rectangles and serve.
