Peanut Butter Blossoms Cookies
Ingredients:
1 cup creamy peanut butter
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar (for rolling)
36 chocolate kisses (unwrapped)
Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix Wet Ingredients: In a large mixing bowl, combine the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract. Beat with an electric mixer until well combined and smooth.
Add Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
Shape Cookies: Roll the dough into 1-inch balls. Roll each ball in granulated sugar until coated. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Add Chocolate Kisses: Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie. Return to the oven for an additional 1-2 minutes.
Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
