Garlic Butter Shrimp Scampi
Ingredients:
1 lb large shrimp, peeled and deveined
8 oz linguine or spaghetti
4 tbsp unsalted butter
2 tbsp olive oil
4 cloves garlic, minced
½ tsp red pepper flakes (optional)
½ cup white wine (or chicken broth)
Juice of 1 lemon
¼ cup fresh parsley, chopped
Salt and black pepper, to taste
Grated Parmesan cheese (for serving, optional)
Directions:
1. Cook the pasta:
In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
2. Sauté the shrimp:
In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil.
Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant.
3. Add the shrimp:
Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for 2–3 minutes on one side, then flip the shrimp and cook for an additional 2–3 minutes until they turn pink and opaque.
4. Add wine and lemon juice:
Pour in the white wine (or chicken broth) and lemon juice. Let it simmer for 2–3 minutes, allowing the sauce to reduce slightly.
5. Combine pasta and sauce:
Add the cooked pasta to the skillet, along with the remaining 2 tablespoons of butter and chopped parsley. Toss everything together, adding reserved pasta water as needed to reach the desired sauce consistency.
6. Serve:
Serve immediately, garnished with extra parsley and grated Parmesan cheese if desired. Enjoy!
