🍫 No-Bake Snickers Cheesecake 🥜
Ingredients
For the Chocolate Peanut Biscuit Base:
275 g digestive biscuits
50 g unsalted (or salted) peanuts
25 g cocoa powder
150 g unsalted butter, melted
For the Cheesecake Filling:
500–600 g full-fat cream cheese (such as Philadelphia)
100 g icing sugar
100 g thick caramel sauce (like Carnation or dulce de leche)
1 tsp vanilla extract
200 g milk chocolate, melted
300 ml double cream (heavy cream)
200–300 g Snickers bars, roughly chopped
For the Topping:
150 ml double cream
2 tbsp icing sugar
50 g caramel sauce (for drizzling)
Chopped peanuts
12 small Snickers pieces (for garnish)
Step-by-Step Instructions
1. Prepare the Base
In a food processor, pulse the digestive biscuits, cocoa powder, and peanuts until finely crushed.
Add the melted butter and pulse again until the mixture resembles damp sand.
Press the mixture firmly into the bottom of an 8-inch (20 cm) deep springform tin. Use the back of a spoon or a flat-bottomed glass to compact it evenly.
Refrigerate while you prepare the filling.
2. Make the Cheesecake Filling
Melt the chocolate in a heatproof bowl over a pan of simmering water or in short bursts in the microwave. Let cool slightly.
In a large mixing bowl or stand mixer, beat the cream cheese, icing sugar, caramel, and vanilla extract until smooth and creamy.
Gradually mix in the melted chocolate until fully combined.
Whip the double cream until stiff peaks form, then gently fold it into the chocolate mixture using a spatula until smooth and well incorporated.
Fold in the chopped Snickers bars.
Pour the mixture over the chilled biscuit base and smooth the top with a spatula.
Cover the tin with plastic wrap or foil and refrigerate for at least 6 hours or preferably overnight to set.
3. Decorate the Cheesecake
Once set, remove the cheesecake from the tin and place it on a serving plate.
In a bowl, whip the double cream with icing sugar until thick and pipeable.
Using a piping bag fitted with a star tip, create swirls across the surface of the cheesecake.
Drizzle generously with caramel sauce over the whipped cream.
Sprinkle chopped peanuts on top and add one small piece of Snickers onto each cream swirl.
