Smoked Sausage Cajun Alfredo
Ingredients:
12 oz smoked sausage, sliced
8 oz fettuccine or penne pasta
1 tbsp olive oil
2 tsp Cajun seasoning
3 cloves garlic, minced
2 cups heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 tbsp unsalted butter
1/4 cup chopped parsley (for garnish)
Salt and pepper to taste
Directions:
Cook Pasta:
Cook pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest. Set the pasta aside.
Sauté Sausage:
Heat olive oil in a large skillet over medium heat. Add smoked sausage slices and cook until browned on both sides. Remove and set aside.
Prepare Cajun Sauce:
In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Add Liquids:
Stir in heavy cream, chicken broth, and Cajun seasoning. Bring the mixture to a simmer, stirring occasionally.
Incorporate Cheese:
Gradually whisk in Parmesan cheese and mozzarella cheese until melted and the sauce is smooth.
Combine Ingredients:
Add the cooked pasta and sausage to the skillet. Toss to coat evenly in the sauce. If the sauce is too thick, add the reserved pasta water, one tablespoon at a time, until the desired consistency is reached.
Season:
Taste and adjust with salt and pepper if necessary.
Serve:
Garnish with chopped parsley and serve immediately.
