๐งพ Ingredients:
1 cup full-fat cottage cheese (slightly drained if very watery)
2 eggs
1/2 cup grated Parmesan or shredded cheese of choice
1/3 cup oat flour (or breadcrumbs, almond flour, or whole wheat flour)
1 small carrot, finely grated (optional)
1 tbsp chopped fresh herbs (parsley, dill, or chives)
1/4 tsp garlic powder
Salt & pepper to taste
Optional: 1 tbsp psyllium husk or flaxseed for better binding
๐ฉโ๐ณ Instructions:
Preheat oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper and lightly grease it.
Mix ingredients: In a bowl, combine cottage cheese, eggs, cheese, flour, grated carrot (if using), herbs, garlic powder, salt, and pepper. Mix well until a thick, scoopable batter forms.
Form patties: Scoop out heaping tablespoons and shape into small patties or rounds. Flatten slightly with a spoon.
Bake for 20โ25 minutes, flipping halfway through, until golden brown and firm.
Cool slightly, then serve warm with a dipping sauce, salad, or in wraps.

Fridge: Store in an airtight container for 3โ4 days.

Want it extra crispy? Broil for the last 2โ3 minutes.
Add spinach, corn, or finely chopped peppers for variety.
