Ingredients:

1 cup cottage cheese (low-fat or full-fat, depending on preference)
4 large eggs
1/2 cup almond flour (or all-purpose flour for a non-keto option)
Pinch of salt
Optional Add-Ins:

1/2 tsp garlic powder (for savory bread)
1/2 tsp cinnamon (for sweet bread)
1/4 cup shredded cheese (cheddar or Parmesan for extra flavor)
Directions:
Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Blend the Ingredients
In a blender or food processor, combine the cottage cheese, eggs, and almond flour.
Blend for 30–60 seconds until smooth and fully combined.
If using any optional ingredients (garlic powder, cinnamon, or shredded cheese), blend them in at this stage.
Step 3: Form the Clouds
Spoon the mixture onto the prepared baking sheet, forming 6–8 evenly spaced mounds.
Use the back of a spoon to gently spread each mound into a round, flat shape about 1/2-inch thick.
Step 4: Bake
Place the baking sheet in the preheated oven.
Bake for 15–20 minutes, or until the edges are golden brown and the tops are set.
The clouds should feel firm to the touch and slightly puffed.
Step 5: Cool & Serve
Let the bread cool slightly before removing it from the baking sheet.
Serve warm or let it cool completely before storing in an airtight container.
