Honey Lime Chicken and Avocado Rice Stack

Honey Lime Chicken and Avocado Rice Stack

Ingredients:

2 cups rice
3 cups chicken broth
1/4 cup soy sauce
1 tablespoon sesame oil
1/4 teaspoon garlic powder
For the chicken:

1 pound boneless, skinless chicken breasts, thinly sliced
1/4 cup honey
1/4 cup lime juice
1/2 teaspoon grated ginger
For the avocado:

1 avocado, sliced
Directions:

Cook the Rice:
In a large pot, bring the chicken broth to a boil. Add the rice, soy sauce, sesame oil, and garlic powder. Stir well. Reduce the heat to low, cover the pot, and let it simmer for 20–25 minutes, or until the rice is fully cooked and tender.

Marinate the Chicken:
In a mixing bowl, combine honey, lime juice, and grated ginger. Add the thinly sliced chicken breasts to the marinade. Mix well to coat evenly. Let it marinate for at least 15 minutes for the flavors to infuse.

Grill the Chicken:
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill each piece for about 3–4 minutes per side, or until the chicken is thoroughly cooked and has a slight char on the outside.

Prepare the Avocado:
While the chicken is grilling, slice the avocado and set aside.

Assemble the Stack:
In a serving dish or individual plates, layer a portion of rice at the bottom, followed by grilled chicken slices, and top with avocado slices.

Serve:
Serve immediately while warm. Optionally, garnish with chopped cilantro or a wedge of lime for added zest.
