Oreo Pancakes with Cream Cheese Drizzle
Ingredients:
2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
½ tsp salt
1 ½ cups milk
2 large eggs
1 tsp vanilla extract
¼ cup unsalted butter, melted
1 cup crushed Oreo cookies
For the Cream Cheese Drizzle:
4 oz cream cheese, softened
1 cup powdered sugar
¼ cup milk (adjust for consistency)
1 tsp vanilla extract
For the Toppings:
Extra crushed Oreos
Whipped cream (optional)
Directions:
Prepare the Oreo Pancake Batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
Gently fold in the crushed Oreo cookies until evenly distributed.
Cook the Pancakes:
Preheat a lightly greased griddle or non-stick skillet over medium heat.
Pour about ¼ cup of batter for each pancake onto the griddle.
Cook until bubbles begin to form on the surface (about 2–3 minutes), then flip and cook the other side for 1–2 minutes or until golden brown.
Repeat with the remaining batter.
Make the Cream Cheese Drizzle:
In a mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the powdered sugar, vanilla extract, and milk. Mix until the drizzle is smooth and reaches a pourable consistency. Adjust the milk as needed.
Assemble and Serve:
Stack the warm pancakes on a plate.
Drizzle generously with the cream cheese sauce.
Top with extra crushed Oreos and add whipped cream if desired.
Serve immediately for the best flavor and texture.
