Pecan Pie Bread Pudding
Ingredients:
1 loaf Italian bread (preferably fresh baked), cubed
4 large eggs
1 cup whole milk
1 cup heavy cream
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
1 teaspoon cinnamon
For the Pecan Pie Topping:
1½ cups chopped pecans
1/2 cup brown sugar, packed
1/4 cup unsalted butter, melted
1/4 cup light corn syrup
1 teaspoon vanilla extract
Directions:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish.
Step 2: Prepare the Bread Base
Spread the cubed Italian bread evenly in the greased baking dish.
Step 3: Make the Custard
In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla extract, and cinnamon.
Pour this mixture evenly over the bread cubes.
Press the bread gently to ensure all pieces absorb the custard mixture.
Let sit for 10 minutes.
Step 4: Prepare the Pecan Topping
In a medium bowl, mix together the chopped pecans, brown sugar, melted butter, corn syrup, and vanilla extract until well combined and coated.
Step 5: Assemble and Bake
Spoon the pecan mixture evenly over the top of the soaked bread.
Bake for 45–50 minutes, or until the top is golden brown and the mixture is bubbly.
Step 6: Serve
Let it cool slightly before serving.
Serve warm, optionally with a scoop of vanilla ice cream for extra indulgence.
