German Potato Pancakes
Ingredients:
4 large potatoes (peeled and grated)
1 small onion (grated)
2 eggs
¼ cup all-purpose flour
½ tsp salt
¼ tsp black pepper
¼ tsp nutmeg (optional)
Oil (for frying)
Instructions:
Prepare Potatoes: Grate the potatoes and onion, then use a clean kitchen towel to squeeze out any excess liquid.
Mix Ingredients: In a large bowl, combine grated potatoes, onion, eggs, flour, salt, pepper, and nutmeg (if using). Mix until well combined.
Heat Oil: Heat a thin layer of oil in a large skillet over medium-high heat.
Form Pancakes: Scoop ¼ cup portions of the potato mixture and flatten into pancakes. Fry in the hot oil for 3-4 minutes per side, or until golden brown and crispy.
Drain and Serve: Place the cooked pancakes on a paper towel-lined plate to drain excess oil. Serve hot with applesauce or sour cream.
Notes:
For extra crispiness, make sure to squeeze out as much liquid from the potatoes as possible before frying.
