Delightful mini pies with rich chocolate filling and a buttery crust, perfect for any occasion.
• Pie crusts (store-bought or homemade) – 1 cup
• Semisweet chocolate – 1/2 cup
• Unsalted butter – 1/2 cup
• Granulated sugar – 3/4 cup
• Vanilla extract – 1 tsp
• Eggs – 2
• Whipped cream – 1 cup
• Chocolate shavings (optional garnish) – 1/4 cup
Directions:
Prepare the Pie Crusts:
Roll out dough, cut into small circles to fit mini muffin cups.
Press dough into cups, trim excess.
Melt the Chocolate:
Melt semisweet chocolate and butter in a heatproof bowl over simmering water.
Stir until smooth, remove from heat, cool slightly.
Whip Up the Filling:
Beat sugar, vanilla extract, and eggs until light and fluffy.
Gradually add melted chocolate mixture, beat until smooth.
Fill the Pie Crusts:
Spoon chocolate filling into prepared mini pie crusts, smooth tops.
Chill and Garnish:
Refrigerate for at least 2 hours or until set.
Top with whipped cream and chocolate shavings before serving.
