A symphony of tangy and sweet in bite-sized treats.
Ingredients:
For the Cookies:
2ΒΎ cups flour
1 teaspoon baking soda
Β½ teaspoon baking powder
1 cup butter, softened
1ΒΌ cups sugar
1 egg
1 teaspoon vanilla extract
For the Lemon Curd Filling:
6 Tablespoons butter, softened
1 cup sugar
4 eggs, divided

For the Topping:
1 lemon zest
2 Tablespoons powdered sugar for garnish
Directions:
Preheat and Prepare:
Preheat oven to 375Β°F (190Β°C).
Spray a mini muffin tin with nonstick cooking spray.
Cookie Dough:
Mix flour, baking soda, and baking powder in a small bowl.
In a large bowl, cream together softened butter and sugar until fluffy.
Beat in egg and vanilla extract.
Gradually incorporate dry ingredients into wet until a cohesive dough forms.
Bake the Cookie Cups:
Form 1β³ dough balls and place in the muffin tin.
Bake for 8-10 minutes until golden brown.
Press down the center of each cookie to create a cup shape. Let cool.
Prepare the Lemon Curd Filling:
Cream together butter and sugar until smooth.
Mix in two whole eggs and two egg yolks, then add lemon juice gradually.
Cook over medium heat, whisking constantly, until thickened (about 5 minutes). Let cool slightly.
Assemble:
Spoon lemon curd into the cooled cookie cups.
Top with lemon zest and chill until set.

Remove from tin, sprinkle with powdered sugar, and enjoy!
