🍋 Stuffed Lemon Cookies 🍪

Ingredients:
Lemon Curd Filling:
1/4 cup caster sugar
1 teaspoon cornstarch
1 egg (53 grams)
3 tablespoons fresh lemon juice
Lemon peel from 1/4 lemon
1 1/2 tablespoons unsalted butter
Lemon Cookie Dough:
1/2 cup unsalted butter (room temperature)
1/2 cup caster sugar
Zest from 3/4 lemon
1 teaspoon vanilla extract
1 egg (52 grams)
1 2/3 cups all-purpose flour
Pinch of salt
1/2 teaspoon baking soda
Granulated sugar for coating
Directions:
Prepare Lemon Curd:
Mix sugar and cornstarch in a heatproof bowl.
Whisk in egg, lemon juice, and lemon peel.
Cook over bain-marie until thick, stirring constantly.
Add butter, mix thoroughly, and chill.
Prepare Cookie Dough:
Cream butter, sugar, lemon zest, and vanilla.
Add egg and mix well.
Fold in flour, salt, and baking soda until a soft dough forms.
Chill dough for at least 20 minutes.
Assemble Cookies:
Flatten dough portions, place frozen lemon curd in center, and roll into balls.
Coat in granulated sugar.
Bake at 350°F (180°C) for 8-9 minutes.
