Rhubarb Fritters
Ingredients:
1/2 cup all-purpose flour
1 cup chopped rhubarb
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 egg
1/2 teaspoon vanilla extract
Vegetable oil for frying
Powdered sugar for dusting
Directions:
1. Mix the flour, sugar, baking powder, and salt in a large bowl.
2. In another bowl, whisk together the milk, egg, and vanilla extract.
3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
4. Gently fold in the chopped rhubarb.
5. Heat vegetable oil in a deep frying pan over medium heat.
6. Drop spoonfuls of the batter into the hot oil, frying until golden brown on both sides (about 2-3 minutes per side).
7. Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
8. Dust with powdered sugar before serving.
