Creamy Broccoli Mac and Cheese

Ingredients:
For the Mac and Cheese:
8 oz elbow macaroni (or pasta of choice)
2 cups broccoli florets (fresh or frozen)
3 tbsp butter
2 tbsp all-purpose flour
2 cups whole milk (or half-and-half for extra creaminess)
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika (optional, for flavor)
Salt and pepper, to taste
For the Topping (optional):
1/4 cup breadcrumbs (panko works great)
2 tbsp melted butter
1/4 cup grated Parmesan cheese

Instructions:
Cook the Pasta and Broccoli:
Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente. During the last 2-3 minutes of cooking, add the broccoli florets to the pot with the pasta. Drain the pasta and broccoli together, then set aside.
Make the Cheese Sauce:
In the same pot (or a large saucepan), melt 3 tbsp butter over medium heat.
Stir in the flour and cook for 1-2 minutes to make a roux, whisking constantly until it turns slightly golden.
Slowly pour in the milk, whisking continuously to prevent lumps. Cook for 3-4 minutes until the mixture thickens and starts to simmer.
Add the Cheese:
Reduce the heat to low. Stir in the shredded cheddar, mozzarella, and grated Parmesan cheese until the sauce is smooth and creamy.
Season with garlic powder, onion powder, paprika (if using), salt, and pepper to taste.
Combine the Pasta, Broccoli, and Sauce:
Add the drained pasta and broccoli to the cheese sauce. Stir gently to coat the pasta and broccoli with the creamy cheese sauce. Taste and adjust the seasoning if needed.
Optional Topping (for baked version):
If you want to bake the mac and cheese, preheat your oven to 375°F (190°C). Transfer the mac and cheese to a greased baking dish.
In a small bowl, mix the breadcrumbs, melted butter, and grated Parmesan cheese. Sprinkle the topping over the mac and cheese.
Bake for 15-20 minutes, or until the top is golden brown and crispy.

Serve the creamy broccoli mac and cheese hot, garnished with extra Parmesan or fresh herbs if desired.
