2. Hearty Hamburger Vegetable Soup
Ingredients:
– 1 pound ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 2 carrots, sliced
– 2 celery stalks, sliced
– 1 bell pepper, diced
– 1 (28-ounce) can diced tomatoes
– 4 cups beef broth
– 1 (8-ounce) can tomato sauce
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– 1 teaspoon dried parsley
– Salt and pepper to taste
– 1 cup frozen peas
– 1 cup frozen corn
Directions:
1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
2. Add the diced onion and minced garlic to the pot and cook for 2-3 minutes, until the onion is translucent.
3. Add the carrots, celery, and bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
4. Stir in the diced tomatoes, beef broth, tomato sauce, dried basil, dried oregano, dried parsley, salt, and pepper. Bring to a boil.
5. Reduce the heat and let the soup simmer for 20-25 minutes, until the vegetables are tender.
6. Add the frozen peas and corn to the pot. Cook for an additional 5 minutes, until the peas and corn are heated through.
