Old Fashioned Stuffed Cabbage Rolls

Ingredients:
1 large head of cabbage
1 lb (450g) ground beef
1/2 lb (225g) ground pork
1 cup cooked rice
1 small onion, finely chopped
2 cloves garlic, minced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
1 egg
1/4 cup fresh parsley, chopped
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and black pepper to taste
1 tablespoon olive oil
1 tablespoon sugar (optional)
1 tablespoon lemon juice (optional)

Directions:
Prepare the Cabbage:
Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head into the boiling water. Cook for 5-7 minutes, or until the outer leaves are tender. Carefully peel off the outer leaves and set aside. You may need to return the cabbage to the water and cook in batches until you have enough leaves.
Make the Filling:
In a large bowl, combine the ground beef, ground pork, cooked rice, chopped onion, minced garlic, egg, parsley, thyme, oregano, salt, and black pepper. Mix until well combined.
Stuff the Cabbage Leaves:
Place a small amount of the meat mixture in the center of each cabbage leaf. Fold the sides of the leaf over the filling, then roll up from the bottom to secure. Place each roll seam-side down in a greased baking dish.
Prepare the Sauce:
In a medium bowl, mix together the tomato sauce, diced tomatoes, olive oil, and sugar (if using). Pour the sauce over the stuffed cabbage rolls in the baking dish. Add lemon juice (if using) for a touch of brightness.
Bake the Cabbage Rolls:
Cover the baking dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 1 hour. Remove the foil and bake for an additional 15-20 minutes, or until the meat is cooked through and the sauce is bubbly.
