Slow Cooker Cheesy Chicken Broccoli Casserole
Ingredients:
1.5 lbs (680g) boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup broccoli florets
1 cup cooked rice
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
Salt and black pepper to taste
1 cup crushed buttery crackers (optional for topping)
2 tablespoons butter, melted (optional for topping)
Directions:
Prepare the Slow Cooker:
Lightly grease the inside of the slow cooker with cooking spray or a small amount of butter.
Combine Ingredients:
In a large bowl, mix together the chicken pieces, broccoli florets, cooked rice, cream of chicken soup, sour cream, shredded cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, dried thyme, salt, and black pepper until well combined.
Transfer to Slow Cooker:
Pour the mixture into the prepared slow cooker and spread it out evenly.
Cook:
Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and the broccoli is tender.
Add Topping (Optional):
About 30 minutes before serving, if using, mix the crushed crackers with melted butter and sprinkle over the casserole. Cover and continue to cook until the topping is crispy.
Serve:
Stir the casserole before serving to mix in the topping if used. Serve hot and enjoy!
