Loaded Smashed Potatoes

Ingredients:
2 lbs baby potatoes (or Yukon Golds), scrubbed and halved
4 tbsp butter, divided
1/2 cup sour cream
1/2 cup shredded cheddar cheese (plus more for topping)
1/4 cup green onions, sliced (plus extra for garnish)
1/2 cup cooked bacon, crumbled (optional)
Salt and pepper, to taste
1/2 tsp garlic powder (optional)
Fresh parsley, chopped (for garnish)

Instructions:
Cook the Potatoes:
In a large pot, bring the halved potatoes to a boil in salted water. Cook for about 15-20 minutes, or until they are fork-tender.
Drain the potatoes and return them to the pot.
Smash the Potatoes:
Using a potato masher, lightly smash the potatoes, leaving them chunky. If you prefer smoother mashed potatoes, mash them a bit more.
Add 2 tbsp of butter, sour cream, garlic powder (if using), and season with salt and pepper to taste. Stir until well combined.
Add the Toppings:
Stir in the shredded cheddar cheese, green onions, and crumbled bacon (if using). Mix until the cheese begins to melt and the ingredients are well combined.
Serve:
Transfer the smashed potatoes to a serving dish and top with extra shredded cheddar cheese, green onions, and crumbled bacon.
Dot with the remaining 2 tbsp of butter and garnish with fresh parsley.
