Stovetop Creamy Macaroni & Cheese

Ingredients:
8 oz (225g) elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
Salt and black pepper to taste
1/2 cup breadcrumbs (optional, for topping)
1 tablespoon melted butter (optional, for topping)

Directions:
Cook the Macaroni:
In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Prepare the Sauce Base:
In the same pot, melt the unsalted butter over medium heat. Whisk in the flour and cook for about 1 minute until bubbly and slightly golden.
Add Dairy:
Gradually whisk in the milk and heavy cream, making sure there are no lumps. Bring to a simmer, stirring constantly, until the mixture thickens, about 3-4 minutes.
Incorporate Cheese:
Reduce the heat to low and stir in the shredded cheddar cheese and grated Parmesan cheese. Continue stirring until the cheese is fully melted and the sauce is smooth.
Season:
Add garlic powder, onion powder, paprika, salt, and black pepper to taste. Mix well.
Combine with Pasta:
Add the cooked macaroni to the cheese sauce and stir to coat evenly. Cook for an additional 2-3 minutes until everything is heated through.
Optional Topping:
If using, combine the breadcrumbs with melted butter and sprinkle on top of the macaroni and cheese. Place the pot under the broiler for 2-3 minutes, or until the top is golden brown and crispy.
