Ingredients:
1 lb flank steak or sirloin steak, thinly sliced against the grain
1 tbsp olive oil
1 medium onion, sliced
1 bell pepper, sliced (green or red)
2 cloves garlic, minced
1 tsp Worcestershire sauce
1/2 tsp dried thyme (optional)
Salt and pepper, to taste
4 oz provolone cheese, shredded (or a cheese of your choice, like cheddar or mozzarella)
1 tbsp butter (optional, for extra richness)
Fresh parsley for garnish (optional)

Instructions:
Prepare the Steak:
Thinly slice the steak against the grain into bite-sized strips. Season with salt, pepper, and dried thyme (if using).
Cook the Steak:
In a large skillet, heat the olive oil over medium-high heat. Add the steak slices in batches, cooking for 2-3 minutes until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.
Cook the Vegetables:
In the same skillet, add the sliced onion and bell pepper. Cook for 4-5 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.
Add the minced garlic and cook for an additional 30 seconds, until fragrant.
Combine the Steak and Vegetables:
Return the cooked steak to the skillet with the vegetables. Add Worcestershire sauce and stir to combine. Cook for another 1-2 minutes to heat everything through and blend the flavors.
Add the Cheese:
Lower the heat to medium-low and sprinkle the shredded cheese over the steak and vegetable mixture. Cover the skillet with a lid and cook for 2-3 minutes, until the cheese has melted and is bubbly.
Finish and Serve:
Stir in the butter for added richness, if desired. Garnish with fresh parsley, if using, and serve hot.
