Pepper Jack Potato Casserole
Ingredients:
6 large potatoes, peeled and sliced thin
2 cups shredded Pepper Jack cheese
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1/2 cup milk
1/4 cup butter, melted
1/2 cup chopped green onions
Salt and pepper, to taste
1 cup crushed Ritz crackers or bread crumbs (optional, for topping)
2 tablespoons butter, melted (for topping)
Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Prepare Sauce: In a large bowl, mix sour cream, cream of chicken soup, milk, melted butter, green onions, and half of the shredded Pepper Jack cheese. Season with salt and pepper.
Assemble Casserole: Layer the sliced potatoes evenly in the prepared baking dish. Pour the sauce mixture over the potatoes, ensuring they are fully coated. Sprinkle the remaining Pepper Jack cheese on top.
Add Topping (Optional): If using, mix the crushed Ritz crackers or bread crumbs with 2 tablespoons melted butter and sprinkle evenly over the cheese.
Bake: Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the potatoes are tender and the top is golden and bubbly.
Serve: Let cool slightly before serving. Enjoy this cheesy, spicy casserole as a side or main dish.
