Roasted Strawberry Whipped Ricotta Toast
Caramelized strawberries and whipped ricotta on crusty bread make the perfect sweet-savory bite for any time of day.
Ingredients:
1 lb strawberries, hulled
2 tbsp honey
Juice of ½ lemon
4 sprigs fresh thyme, plus extra for garnish
2 slices rustic bread (about 1-inch thick)
1 tbsp olive oil
¾ cup whole milk ricotta cheese
Pinch of sea salt
Directions:
Preheat your oven to 400°F (200°C).
Place the strawberries in a medium baking dish. Drizzle with honey, squeeze the lemon juice over them, and toss in the thyme sprigs.
Roast for 20 minutes, stirring halfway through, until the berries are soft and caramelized. Let cool slightly.
Brush the bread slices with olive oil and toast in the oven for about 1 minute, or until golden and crisp.
In a food processor, blend the ricotta for 30 seconds to 1 minute until it’s smooth and airy.
Spread the whipped ricotta generously over each slice of toasted bread.
Top with the warm roasted strawberries. Finish with a sprinkle of fresh thyme and a pinch of sea salt.
Serve immediately and enjoy!
